Roast Chicken & Stuffing Bap / Stottie
Why? A chicken and stuffing sandwich will hit the spot for most people and even better, you can make it with leftovers from Sunday lunch (plan so that there's extra!), or if you only cater for one at home and you aren't having a full roast dinner then simply buy a half chicken from the rotisserie at the supermarket and either mix up some Paxo to cook or buy it from the deli counter readymade.
If you make your roast chicken dinner on Sunday and keep the bird in the fridge then the ingredients will last you Monday, Tuesday and Wednesday! And if you don't fancy the same chicken sandwich then use the chicken in some of our other chicken-based lunch ideas. Why not have it cold in the summer months with a bit of lettuce and hot in the cooler months. Alternatively add some leftover roast vegetables (roasted peppers, thinly sliced parsnips or potatoes or roasted onion) for extra flavour.

Shopping List
- Approx half small leftover roasted Chicken - home-roasted or rotisserie
- Paxo or supermarket own stuffing prepared in advance (about 150g needed for 3 days worth)
- Butter
- Medium sized bread bun or stottie bread
How to Prepare:
Cold chicken sandwich - Butter the bun on both sides (you can use plain bread but a bun is better for holding all that meat and stuffing together). Tear your roasted chicken into rough pieces and take a third of the leftovers for each sandwich. Try and include a bit of chicken skin as this really adds flavour. Spread stuffing evenly throughout the sandwich and put it all together. Wrap with cling film or foil to hold it all together.
Hot chicken sandwich - You can pre-butter your bun at home, and then take the cold chicken and stuffing separately to work. Heat chicken pieces and stuffing on a plate in the microwave for a minute or two until steaming hot and then add to your buttered bap. Yummy!
