- 300g tub hummus
- Pack of 6 pitta breads
- Pack of little gem lettuce or similar
- 6 carrots
How to Prepare:
Simply stuff 2 pitta with about 1/3 (100g) of the hummus and a few crunchy leaves of lettuce - the more the healthier! It's easiest to prepare the carrot sticks in a batch - peel and slice the carrots into batons and store in a freezer bag. 6 carrots should do about 3 days worth of portions. Alternatively you can cheat by getting ready-cut carrot batons which are sold in most supermarkets, although these might cost a little more. Store hummus and lettuce in a fridge in between lunches. Why not try wholemeal bread and low-fat hummus if you want to be extra-healthy?
