Hot Buttered Corn on the Cob
Why? Surely everyone loves hot sweet corn with melted butter on top, but its not something you automatically think about having for lunch. Its actually a great idea as it is tasty, healthy (apart from the butter which you can leave out if you prefer) and very simple to make at work in the microwave as part of a hot meal. You might want to serve it with something else like some cooked chicken or snacks like crisps or a piece of fruit as its not hugely filling on its own but it makes a nice alternative lunch idea.

- 4 pack of fresh sweetcorn
- Butter
How to Prepare:
Rub butter over the corn and place on a plate or microwavable dish. Microwave on high power for 2 minutes then turn over and microwave for a further 2 minutes. Add salt if you prefer then enjoy and be careful not to burn your fingers!
