Fruity Couscous Salad
Why? An easy to prepare and pack recipe with tons of fruit in it - nutritious and good for your taste buds! You can either prepare it before work and take in a plastic tub or take the fruit and spring onions prepared and combine at work with freshly made quick-cook couscous for a hot meal.

Shopping List
- 1kg pack couscous
- 200g of flaked almonds
- 250g apricots
- 500g raisins
- Bunch spring or salad onions
- salt, pepper and cumin to taste
How to Prepare:
Prepare about a 1/4 of the pack of couscous to the guidelines on the pack (for ease you should be able to buy quick-cook couscous and simply add the water). Combine in a bowl with 50g flaked almonds, about 1/4 of the pack of apricots (chopped), 80g of raisins (if you don't have a measure just chuck in a handful!) and a couple of the spring onions (finely sliced) - the bunch should last you 4 days. Add salt and peper to taste and cumin if you have it available.
